Chicken Gravy

Ingredients

  • ½ cup flour
  • ½ cup butter
  • 1 quart chicken stock
  • 2 tablespoons cream
  • 1 pinch dried sage
  • 1 - 1½ teaspoons salt

Instructions

  1. Melt butter in a saucepan over medium-low heat.
  2. Whisk in flour until fragrant, about 10 to 12 minutes.
  3. Gradually whisk in cold chicken stock.
  4. Sprinkle in sage and whisk to combine.
  5. Bring the gravy to a boil.
  6. Reduce heat to a low boil and cook, stirring regularly until thickened, about 5 to 10 minutes.
  7. Stir in cream and season with salt, white pepper, and cayenne pepper.
