Chicken Gravy

Ingredients

  • reserved pan drippings pan drippings from roasted chicken
  • 7 cups chicken broth
  • ΒΌ cup cornstarch
  • to taste salt
  • to taste freshly ground black pepper

Instructions

  1. Remove the roasted chicken from the pan and place the roasting pan with drippings over medium-high heat.
  2. Add chicken broth and bring to a simmer, scraping up the browned bits from the pan.
  3. Strain the contents through a fine-mesh strainer into a bowl and skim off the fat.
  4. Transfer the liquid to a saucepan and simmer over medium-high heat.
  5. In a small bowl, mix some of the liquid with cornstarch to create a slurry.
  6. Gradually whisk the slurry into the simmering liquid and cook until thickened, about 5 minutes.
  7. Season the gravy with salt and pepper to taste.
