Instructions
- Remove the roasted chicken from the pan and place the roasting pan with drippings over medium-high heat.
- Add chicken broth and bring to a simmer, scraping up the browned bits from the pan.
- Strain the contents through a fine-mesh strainer into a bowl and skim off the fat.
- Transfer the liquid to a saucepan and simmer over medium-high heat.
- In a small bowl, mix some of the liquid with cornstarch to create a slurry.
- Gradually whisk the slurry into the simmering liquid and cook until thickened, about 5 minutes.
- Season the gravy with salt and pepper to taste.
