Ingredients

The base

  • 1 cup juices (from the roasting pan, fat removed or chicken broth)

The roux

  • 2 tablespoons cooking fat (separated from roasting pan juices or butter)
  • 1 tablespoon whole-wheat flour

Seasoning

  • to taste salt
  • to taste pepper

Instructions

  1. Separate the cooking fat from the pan juices.
  2. Heat the cooking fat (or butter) over medium-low heat until melted.
  3. Whisk in the flour to avoid clumps and cook until the mixture darkens in color.
  4. Whisk in the pan juices (or broth) and bring to a light boil.
  5. Cook while whisking until the gravy reduces and thickens.
  6. Season with salt and pepper and serve warm.
