Homemade Gravy

skimmed and strained roast turkey or chicken drippings

chicken bouillon (optional)

Instructions
- Melt the butter in a skillet or saucepan over medium-high heat and sauté the onions until they start to brown.
- Whisk in the flour to create a roux and stir for 2-3 minutes.
- Gradually add about ¼ cup of stock and whisk until the mixture thickens.
- Add the remaining stock and adjust the thickness as desired, seasoning with bouillon, salt, and pepper.
- If using drippings, heat turkey fat or butter, make a roux, and follow similar steps as above.
