Ingredients

The stock and drippings

  • 6 cups Make-Ahead Turkey Stock
  • 1–2 cups strained and skimmed roast turkey drippings

The roux

  • 5⅓ Tbsp. unsalted butter
  • cup all-purpose flour
  • to taste Kosher salt
  • to taste freshly ground black pepper

Instructions

  1. Bring the turkey stock to a boil in a large saucepan and add the turkey drippings.
  2. Melt the butter in a small skillet and whisk in the flour to make a roux.
  3. Slowly add warm stock to the roux, whisking to combine.
  4. Simmer the mixture to thicken the gravy and season to taste.
