Taco Salad

Ingredients

The salad

  • 5 cups mixed salad greens
  • 1 cup halved cherry tomatoes
  • ½ cup crumbled tortilla chips or strips
  • 2 tablespoons apple cider vinaigrette
  • 2 teaspoons apple cider vinaigrette
  • 1 tablespoon light ranch dressing
  • cup shredded Mexican or cheddar cheese
  • 1 each avocado, sliced

The turkey

  • 1 pound lean ground turkey
  • 1 teaspoon chili powder
  • ½ teaspoon cumin powder
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 2 tablespoons tomato paste
  • cup reduced sodium or organic chicken broth

Cooking spray

  • 1 spray canola oil

Instructions

  1. 1. Spray canola oil in a large sauté pan over medium-high heat.
  2. 2. Once the oil shimmers, add the turkey and season with chili powder, cumin, salt, and pepper.
  3. 3. Break the turkey into smaller pieces and brown for two minutes.
  4. 4. Add tomato paste and flip the meat to finish cooking, breaking it up again.
  5. 5. Stir in chicken broth to moisten.
  6. 6. In a large bowl, toss together the greens, tomatoes, chips, and dressings.
  7. 7. Portion the salad into four shallow dishes and top with turkey, cheese, and avocado.
