Ingredients

The salad

  • 1 pound ground beef
  • 4 cups romaine lettuce
  • ¾ cup black beans
  • ½ cup corn kernels
  • ½ cup diced tomato
  • 1 medium avocado
  • ¾ cup cheddar cheese
  • ¼ cup sliced olives
  • 1 cup tortilla strips
  • ¼ cup sour cream
  • cilantro leaves for garnish

The dressing

  • cup catalina salad dressing

For cooking

  • 2 teaspoons olive oil
  • 1 packet taco seasoning

Instructions

  1. Heat olive oil in a pan over medium-high heat.
  2. Add ground beef and cook for 3 minutes, breaking it up.
  3. Stir in taco seasoning and 2 tablespoons of water, cooking for another 3-4 minutes until done.
  4. Let the meat cool for 5 minutes.
  5. In a bowl, combine the meat, lettuce, beans, corn, tomato, avocado, cheese, olives, and tortilla strips.
  6. Add the dressing and toss to coat.
  7. Top with sour cream, extra tortilla strips, and cilantro leaves before serving.
