Ingredients

The salad

  • 1 pound lean ground meat
  • 2 tablespoons taco seasoning
  • 8 cups romaine or iceberg lettuce
  • 1 ½ cups tomatoes
  • 2 avocados peeled and seeded
  • 1-2 limes juice of
  • cup red onion
  • cilantro chopped

Cilantro-Lime Ranch

  • ½ cup mayonnaise
  • ½ lime juiced
  • 2 tablespoons cilantro leaves
  • 2 tablespoons unsweetened plain almond milk

Optional Toppings

  • fresh cilantro
  • sliced black olives
  • fresh jalapenos

Instructions

  1. Heat a skillet over medium heat and brown the ground meat with taco seasoning.
  2. Mash the avocados with lime juice and salt, adding half the red onion and cilantro if desired.
  3. Mix tomatoes with lime juice, remaining red onion, salt, and cilantro for pico de gallo.
  4. Combine all dressing ingredients and whisk, adjusting consistency with almond milk as needed.
  5. Assemble the salad by dividing lettuce among bowls and topping with ground meat, guacamole, and pico de gallo, then drizzle with ranch.
