Paleo Cauliflower Fried Rice

Ingredients

The rice

  • 1 pound riced cauliflower
  • 1 piece carrot, diced
  • 1 small white onion, diced
  • 1 piece celery, diced (optional)
  • 2 pieces pasture raised eggs, whisked
  • 2 tbsp sesame oil
  • ½ tsp garlic powder

The sauce

  • ¼ cup coconut aminos
  • 1 tbsp maple syrup
  • 2 tbsp sesame oil
  • 1 tsp tapioca flour
  • 1 tsp sea salt

For garnish (optional)

  • to taste sesame seeds
  • to taste chopped chives or green onion

Instructions

  1. Whisk together all sauce ingredients in a medium bowl and set aside.
  2. Whisk the eggs in a small bowl and set aside.
  3. Heat a large pan over medium heat and add sesame oil.
  4. Once hot, add onions, carrots, celery, and garlic powder, stirring for 3-5 minutes.
  5. Add the cauliflower rice and stir for about one minute.
  6. Make a well in the middle of the rice and pour in the eggs.
  7. Stir until the eggs are fully cooked, then add the sauce.
  8. Mix everything together and remove from the stove.
  9. Top with sesame seeds and chives before serving.
