Ahi Tuna Salad with Sesame Ginger Dressing

Ingredients

The salad

  • 1 pound ahi tuna, cooked to rare and thinly sliced
  • 6 cups mixed salad greens
  • 1 cup red or yellow bell pepper, seeded and thinly sliced
  • 2 cups cucumber noodles
  • 2 cups carrot noodles
  • ½ cup wonton strips
  • 2 tablespoons sesame seeds
  • 1 whole avocado, thinly sliced

The dressing

  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 teaspoon finely minced fresh ginger
  • 2 tablespoons honey
  • ¼ cup sesame oil
  • to taste salt and pepper

Instructions

  1. Prepare the dressing by combining all dressing ingredients in a jar and shaking vigorously.
  2. Store the dressing in the refrigerator until ready to use.
  3. In a large bowl, place the mixed greens and drizzle with half of the dressing.
  4. Layer the ahi tuna, bell peppers, avocado, cucumber noodles, carrot noodles, and wonton strips on top of the greens.
  5. Sprinkle with sesame seeds and drizzle the remaining dressing over the salad.
  6. Serve immediately.
