Ahi Tuna Watermelon Salad

Ingredients

  • 1 lb sushi-grade tuna
  • 2 ½ tablespoons soy sauce
  • 2 ½ teaspoons fresh lime juice
  • 1 tablespoon grapeseed oil
  • 1 teaspoon sesame oil
  • 1 teaspoon honey
  • ¾ teaspoon minced fresh ginger
  • 1 teaspoon minced garlic
  • teaspoon red pepper flakes
  • 2 cups watermelon, half-inch cubes
  • 1 Persian cucumber sliced 1/8-inch thick
  • 1 shallot finely sliced, for garnish
  • to taste salt
  • to taste cilantro or cilantro micro greens for garnish

Instructions

  1. Trim away any skin from the tuna fillet and cut it into ¼-inch cubes.
  2. In a medium bowl, whisk together soy sauce, lime juice, grapeseed oil, sesame oil, honey, garlic, ginger, and red pepper flakes.
  3. Pour the marinade over the tuna and add salt to taste. Marinate in the refrigerator for at least 45 to 50 minutes.
  4. To serve, divide the tuna among 4 plates, adding watermelon cubes around it, along with cucumber slices.
  5. Garnish with sliced shallots and cilantro.
