Ahi Tuna Salad

Ingredients

The Ahi Tuna

  • ½ tsp Dijon mustard
  • 8 oz Ahi tuna (sushi grade)
  • 1 tbsp White sesame seeds
  • 1 tbsp Black sesame seeds
  • ½ tsp Sea salt

The Salad

  • 3 oz Asparagus (woody ends trimmed)
  • oz Arugula
  • ½ medium Avocado (diced)

The Dressing

  • 2 tbsp Coconut aminos
  • tbsp Dijon mustard
  • 1 tbsp Lime juice
  • ½ tbsp Sesame oil
  • ½ tsp Fresh ginger (optional; grated)
  • 1 tbsp Honey (optional)
  • to taste none Sea salt (optional)

Instructions

  1. Preheat a large skillet over medium-high heat.
  2. Spread Dijon mustard over the tuna steak on all sides.
  3. Combine black and white sesame seeds on a plate and coat the tuna in the seeds.
  4. Sear the tuna in the hot skillet for about 1 minute per side.
  5. Transfer the tuna to a cutting board, cut lengthwise, then slice.
  6. Cook asparagus in hot water with salt until bright green, then rinse under cold water.
  7. Mix dressing ingredients in a bowl until smooth.
  8. Divide arugula among serving bowls and top with asparagus, avocado, and sliced tuna. Drizzle with dressing.
