Ingredients

The dough

  • cups all-purpose flour
  • 2 Tbsp white sugar
  • ½ tsp salt
  • 6 Tbsp cold butter
  • 2 Tbsp cold shortening
  • ¼ cup ice water

For blind-baking

  • cups dried beans

Instructions

  1. Chill the flour, sugar, and salt mixture in the freezer for 30 minutes.
  2. In a food processor, combine the chilled flour mixture with butter and shortening, pulsing until the mixture resembles peas.
  3. Gradually add ice water, processing until the dough forms.
  4. Transfer the dough to a floured surface and shape it into a disk.
  5. Wrap the disk in plastic wrap and chill for at least 30 minutes.
  6. To freeze, double wrap the disk and place it in a zip-top freezer bag.
  7. For use, roll out the dough and bake according to your recipe's instructions.
