Lemon Raspberry Cheesecake Popsicles

Ingredients

The popsicle mixture

  • 5 oz low fat evaporated milk
  • ¼ cup white sugar
  • 3 oz cream cheese, softened
  • ¼ cup plain greek yogurt
  • 1 tsp vanilla extract
  • 1 tsp lemon zest
  • 1 cup raspberries
  • 1 tbsp honey
  • 1 tbsp lemon juice

The crust

  • 2 pieces graham crackers, crushed

Instructions

  1. Blend raspberries, honey, and lemon juice until smooth and set aside.
  2. Heat evaporated milk and sugar in a saucepan until the sugar dissolves.
  3. Whisk cream cheese while slowly adding the warm milk mixture until smooth.
  4. Mix in greek yogurt, vanilla extract, and lemon zest, then cool in the refrigerator.
  5. Fill popsicle molds halfway with cheesecake mixture, add raspberry puree, and top with more cheesecake mixture.
  6. Swirl the mixtures if desired, insert sticks, and freeze for 4 hours.
  7. Remove popsicles from molds and dip tops in crushed graham crackers.
