Lemon Raspberry Cheesecake Popsicles

The popsicle mixture

The crust

graham crackers, crushed
Instructions
- Blend raspberries, honey, and lemon juice until smooth and set aside.
- Heat evaporated milk and sugar in a saucepan until the sugar dissolves.
- Whisk cream cheese while slowly adding the warm milk mixture until smooth.
- Mix in greek yogurt, vanilla extract, and lemon zest, then cool in the refrigerator.
- Fill popsicle molds halfway with cheesecake mixture, add raspberry puree, and top with more cheesecake mixture.
- Swirl the mixtures if desired, insert sticks, and freeze for 4 hours.
- Remove popsicles from molds and dip tops in crushed graham crackers.
