Healthy Matcha Pistachio Energy Bites

Instructions
- Soak the dates in hot water for one hour to soften them, or skip this step if using fresh soft dates.
- Remove the pits from the dates and discard them.
- Combine all ingredients in a food processor and blend until finely chopped.
- Scoop out the mixture using a tablespoon and roll into balls.
- Place the balls on a parchment-lined baking sheet.
- Refrigerate for one hour or until firm.
- Store in an airtight container in the fridge for up to two weeks.
