Instructions
- Chop the okra into 2.5 cm pieces and set aside.
- In a deep skillet, combine olive oil, grated tomatoes, coriander, garlic, spices, and salt over medium heat, covering and stirring occasionally for 10 minutes.
- Add the zucchini, cover again, and simmer for another 10 minutes until the zucchini is almost cooked.
- Add the okra, cover, and simmer for another 10 minutes or until the okra is soft and cooked.
- Serve warm or cold with crusty bread or as a side dish.
