Instructions
- Wash and dry the okra, then slice it into ½-¾ inch rings.
- In a skillet, heat olive oil over medium-high heat, add onion and sauté until tender.
- Add garlic and stir for a minute until fragrant, then add the okra and cook for about 10-12 minutes until vibrant green and tender-crisp.
- Stir in the spices and salt, and sauté for another 2 minutes.
- Add diced tomatoes and cook until the juices release, about 2-3 minutes.
- Adjust seasoning with salt and pepper, drizzle with more olive oil if desired, and squeeze lemon juice on top.
- Garnish with fresh parsley and serve as a side dish or over rice.
