Ingredients

  • ½ pound fresh okra
  • 1 tablespoon olive oil
  • 1 teaspoon olive oil
  • 1 cup finely diced onion
  • 5 cloves garlic
  • ½ teaspoon salt
  • 1 teaspoon coriander
  • 1 teaspoon cumin
  • 2 pieces roma tomatoes
  • ½ piece lemon
  • to taste fresh flat leaf parsley (optional)

Instructions

  1. Wash and dry the okra, then slice it into ½-¾ inch rings.
  2. In a skillet, heat olive oil over medium-high heat, add onion and sauté until tender.
  3. Add garlic and stir for a minute until fragrant, then add the okra and cook for about 10-12 minutes until vibrant green and tender-crisp.
  4. Stir in the spices and salt, and sauté for another 2 minutes.
  5. Add diced tomatoes and cook until the juices release, about 2-3 minutes.
  6. Adjust seasoning with salt and pepper, drizzle with more olive oil if desired, and squeeze lemon juice on top.
  7. Garnish with fresh parsley and serve as a side dish or over rice.
