Ingredients

The okra

  • 1 pound okra

The seasoning

  • 2 teaspoons canola or vegetable oil
  • ½ teaspoon coarse salt
  • ¼ teaspoon black pepper

Instructions

  1. Preheat the oven to 425°F.
  2. Slice off the top ½ inch of the okra.
  3. Layer the okra evenly on a baking sheet.
  4. Drizzle the okra with oil and coat evenly.
  5. Sprinkle with coarse salt and black pepper.
  6. Roast in the oven for 10 minutes, then stir the okra.
  7. Return to the oven and roast for an additional 10 minutes until slightly blackened and crunchy.
