Ingredients

The dough

  • ¼ cup rolled oats
  • 2 pitted dates
  • ½ cup raw almonds
  • ½ cup roasted salted peanuts
  • ½ cup roasted, salted natural peanut butter

The chocolate coating

  • 1 cup dairy-free semisweet or dark chocolate

Instructions

  1. Process the oats until they are in small pieces, then add the dates and process again.
  2. Set the oat-date mixture aside and process the almonds and peanuts until they turn into a meal.
  3. Combine the nut meal with peanut butter and pulse until mixed, then add the oats and dates to form a dough.
  4. Scoop small bits of dough and roll them into balls, placing them on a parchment-lined cookie sheet.
  5. Freeze the balls for 30 minutes to harden.
  6. Melt the chocolate using a double boiler or microwave.
  7. Dip the frozen balls into the melted chocolate, allowing excess chocolate to drip off.
  8. Place the coated balls back on the parchment-lined sheet and freeze again until set.
  9. Store in an airtight container in the freezer or fridge until serving.
