Raw Peanut Butter Patties

Ingredients

The cookie base

  • 1 cup raw salted peanut butter
  • 1 cup raw almonds
  • 1 cup raw peanuts
  • ½ cup rolled oats
  • 5 pieces pitted dates

The chocolate coating

  • cups dairy-free dark or semisweet chocolate

Instructions

  1. Process oats in a food processor until finely chopped, then add dates and process until small bits remain.
  2. Set the oat-date mixture aside and process almonds and peanuts until they turn into a meal.
  3. Combine the nut meal with peanut butter and pulse until mixed, then add the oat-date mixture and process until a loose dough forms.
  4. Form small discs from the dough and place them on a parchment-lined cookie sheet, then freeze for 30 minutes.
  5. Melt dark chocolate over a double boiler, then dip the frozen cookies in the chocolate, one at a time, and place them back on the parchment-lined sheet.
  6. Repeat until all cookies are coated, then store in an airtight container in the fridge or freezer.
