Raw Peanut Butter Patties

The chocolate coating

dairy-free dark or semisweet chocolate
Instructions
- Process oats in a food processor until finely chopped, then add dates and process until small bits remain.
- Set the oat-date mixture aside and process almonds and peanuts until they turn into a meal.
- Combine the nut meal with peanut butter and pulse until mixed, then add the oat-date mixture and process until a loose dough forms.
- Form small discs from the dough and place them on a parchment-lined cookie sheet, then freeze for 30 minutes.
- Melt dark chocolate over a double boiler, then dip the frozen cookies in the chocolate, one at a time, and place them back on the parchment-lined sheet.
- Repeat until all cookies are coated, then store in an airtight container in the fridge or freezer.
