Ingredients

The dough

  • 1 cup Medjool dates, pitted
  • 1 cup peanut butter (or other nut butter)
  • 1 tablespoon flax seeds, ground
  • 3 tablespoons water
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking soda
  • 1 teaspoon apple cider vinegar

Optional topping

  • to taste coarse sea salt

Instructions

  1. Preheat the oven to 350ºF and line a baking sheet with parchment paper.
  2. Process the dates in a food processor until crumbly.
  3. Add peanut butter, ground flax, water, vanilla, baking soda, and vinegar to the processor and blend until a sticky batter forms.
  4. Scoop heaping tablespoons of dough, roll into balls, and place on the baking sheet spaced apart.
  5. Flatten each ball slightly and sprinkle with coarse sea salt if desired.
  6. Bake for 13 to 15 minutes until edges are dry; the center will be soft.
  7. Cool completely before removing from the baking sheet.
