Peanut Butter Date Cookies

peanut butter (or other nut butter)

flax seeds, ground

vanilla extract

apple cider vinegar

Instructions
- Preheat the oven to 350ºF and line a baking sheet with parchment paper.
- Process the dates in a food processor until crumbly.
- Add peanut butter, ground flax, water, vanilla, baking soda, and vinegar to the processor and blend until a sticky batter forms.
- Scoop heaping tablespoons of dough, roll into balls, and place on the baking sheet spaced apart.
- Flatten each ball slightly and sprinkle with coarse sea salt if desired.
- Bake for 13 to 15 minutes until edges are dry; the center will be soft.
- Cool completely before removing from the baking sheet.
