Paleo Peanut Butter Patties

palm shortening

The filling and coating

sunbutter

chocolate chips
Instructions
- Combine almond flour, salt, and baking soda in a food processor.
- Pulse in shortening, honey, and vanilla until mixed.
- Roll out the dough between two pieces of parchment paper to ¼-inch thick.
- Chill the dough in the freezer for 20 minutes.
- Use a 2-inch cookie cutter to cut out the dough.
- Press a thumb into the center of each circle to create an indentation.
- Bake the cookies at 350°F for 4-6 minutes.
- Cool the cookies for 1 hour.
- Place one teaspoon of sunbutter on top of each cookie.
- Freeze the cookies for 10 minutes.
- Melt chocolate over very low heat.
- Dip the cookies in the melted chocolate.
- Place the dipped cookies on a parchment-lined baking sheet.
- Freeze the cookies for 30 minutes before serving.
