Paleo Butter Cookies

Ingredients

  • cups blanched almond flour
  • ¼ teaspoon celtic sea salt
  • ½ cup salted butter
  • ¼ cup agave nectar or honey
  • 1 tablespoon vanilla extract

Instructions

  1. 1. Pulse together almond flour and salt in a food processor.
  2. 2. Add butter, honey, and vanilla, and pulse until well combined.
  3. 3. Separate the dough into 2 balls and place each on parchment paper.
  4. 4. Cover each ball with another piece of parchment paper and roll out to ¼ inch thick.
  5. 5. Place the rolled dough in the freezer for 30 minutes.
  6. 6. Use a 2-inch cookie cutter to cut out cookies.
  7. 7. Bake at 350°F for 5-7 minutes.
  8. 8. Cool and serve.
