Instructions
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Beat the shortening, honey, and yogurt until smooth and light.
- Add the egg, vanilla extract, and almond extract, mixing until combined.
- In a separate bowl, whisk together the almond flour, coconut flour, tapioca flour, baking powder, baking soda, and salt.
- Mix the dry ingredients into the wet ingredients in three additions.
- For rolled cookies, chill the dough for 20-30 minutes, then roll out and cut into shapes.
- For drop cookies, roll the dough into balls and flatten them on the baking sheet.
- Bake for 5-7 minutes until the bottoms are light brown.
- Cool the cookies completely on a rack before frosting.
- To make the frosting, beat together coconut oil, shortening, and raw honey until smooth.
- Stir in the arrowroot powder, coconut flour, vanilla extract, and food coloring, if using.
- Frost the cooled cookies with the frosting.
