Instructions
- 1. Preheat the oven to 315º F.
- 2. Process coconut sugar in a food processor until fine, then add remaining cookie ingredients and pulse until combined.
- 3. Roll out the dough on a parchment-lined surface to about ¼" thick, cut into shapes, and chill for 15 minutes.
- 4. Bake for 7-9 minutes, or until edges are set. Let cool on the cookie sheet.
- 5. For the frosting, process all frosting ingredients in a food processor until well combined.
- 6. Frost the cooled cookies and enjoy.
