Ingredients

The truffle mixture

  • ½ cup unsalted butter, softened to room temperature
  • ¾ cup creamy peanut butter (not natural style)
  • ½ teaspoon pure vanilla extract
  • teaspoon salt
  • 3 cups confectioners’ sugar
  • ½ cup M&M’S Baking Bits

The chocolate coating

  • 16 ounces semi-sweet chocolate, coarsely chopped

Instructions

  1. Line two large baking sheets with parchment paper or silicone baking mats.
  2. Beat the softened butter in a large bowl until creamy, then add peanut butter, vanilla, and salt, mixing until combined.
  3. Gradually add confectioners’ sugar and mix until the mixture is soft yet crumbly.
  4. Incorporate M&M’S into the peanut butter dough using a spatula or your hands.
  5. Roll the mixture into 1-inch balls and place them on the baking sheets.
  6. Chill the balls in the refrigerator for 1 hour until firm.
  7. Melt the chocolate using a double boiler or microwave, stirring until smooth.
  8. Dip each peanut butter ball in the melted chocolate and place back on the baking sheet.
  9. Allow the chocolate to set in the refrigerator before serving.
