Peanut Butter M&M Cookies

Ingredients

The dough

  • ½ cup salted butter, softened to room temperature
  • ½ cup packed light brown sugar
  • ¼ cup granulated sugar
  • 1 large egg
  • ¾ cup creamy peanut butter
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon baking soda
  • cups all-purpose flour (spooned & leveled)

The mix-ins

Instructions

  1. Cream the butter and sugars together in a bowl using a mixer.
  2. Mix in the peanut butter, egg, and vanilla in that order.
  3. Slowly add the baking soda and flour, mixing until just combined.
  4. Fold in the mini M&Ms with a wooden spoon.
  5. Chill the dough for at least 1-2 hours.
  6. Preheat the oven to 350°F (177°C).
  7. Drop chilled dough by scant tablespoonfuls onto a lined cookie sheet.
  8. Press the dough balls down slightly and bake for 11-12 minutes.
  9. Allow the cookies to cool completely on a wire rack.
