Ingredients

The base

  • 1 can full fat coconut milk
  • 2 large egg yolks
  • ¼ teaspoon vanilla stevia
  • a pinch Celtic sea salt

The chocolate

  • 4 ounces chocolate chips

Instructions

  1. Heat coconut milk in a medium saucepan.
  2. Stir in egg yolks, stevia, and salt.
  3. Cook over medium heat for 5-10 minutes, stirring constantly.
  4. Remove from heat and transfer to a blender, adding chocolate chips.
  5. Blend on high for 30 seconds.
  6. Pour scant ½ cup of the mixture into 6 half-cup ramekins.
  7. Refrigerate for at least 8 hours or overnight.
  8. Serve chilled.
