Instructions
- Soak the cashews in water for up to 2 hours, then drain and rinse them.
- Combine the drained cashews, almond milk or water, melted coconut oil, cacao powder, maple syrup, vanilla extract, and salt in a high-speed blender.
- Blend the mixture until completely smooth and creamy, scraping down the sides as needed.
- Pour the mixture into 4 small dishes, each about ½ cup.
- Refrigerate the dishes for 3 to 4 hours or overnight until set.
- Serve chilled, optionally topped with coconut whipped cream, sliced strawberries, or shaved chocolate.
