Ingredients

Chocolate Cake

  • ¼ cup all-purpose flour
  • 1 tablespoon natural cocoa powder
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 4 tablespoons unsalted butter
  • ¼ cup granulated sugar
  • 1 large egg white
  • ¼ teaspoon vanilla
  • 2 tablespoons milk
  • 2 tablespoons hot coffee or water

Chocolate Icing

  • 2 tablespoons unsalted butter
  • 1 tablespoon milk
  • 1 teaspoon light corn syrup
  • ½ teaspoon vanilla extract
  • 2 heaping tablespoons finely chopped semisweet chocolate
  • ½ cup powdered sugar
  • optional sprinkles

Instructions

  1. Preheat the oven to 350°F and grease a 7x5-inch baking dish.
  2. Whisk together flour, cocoa powder, baking powder, and salt in a small bowl.
  3. Cream butter and sugar in a medium bowl until light and fluffy, then whisk in egg white and vanilla.
  4. Stir in half of the flour mixture, followed by all of the milk, and then the remaining flour mixture, mixing until just combined.
  5. Stir in hot coffee or water until combined; the mixture will be thin.
  6. Pour the batter into the prepared baking dish and bake for 14 to 18 minutes until a toothpick comes out clean.
  7. Cool the cake for at least five minutes before making the icing.
  8. In a saucepan, combine butter, milk, corn syrup, and vanilla, heating until the butter melts.
  9. Add chocolate and whisk until melted, then reduce heat and whisk in powdered sugar until smooth.
  10. Pour the icing over the slightly cooled cake and add sprinkles if desired.
  11. Allow the glaze to set for 5 to 10 minutes before slicing and serving.
