Instructions
- Preheat the oven to 350°F and grease a 7x5-inch baking dish.
- Whisk together flour, cocoa powder, baking powder, and salt in a small bowl.
- Cream butter and sugar in a medium bowl until light and fluffy, then whisk in egg white and vanilla.
- Stir in half of the flour mixture, followed by all of the milk, and then the remaining flour mixture, mixing until just combined.
- Stir in hot coffee or water until combined; the mixture will be thin.
- Pour the batter into the prepared baking dish and bake for 14 to 18 minutes until a toothpick comes out clean.
- Cool the cake for at least five minutes before making the icing.
- In a saucepan, combine butter, milk, corn syrup, and vanilla, heating until the butter melts.
- Add chocolate and whisk until melted, then reduce heat and whisk in powdered sugar until smooth.
- Pour the icing over the slightly cooled cake and add sprinkles if desired.
- Allow the glaze to set for 5 to 10 minutes before slicing and serving.
