Ingredients

The pudding

  • 4 cups Dried White Bread
  • 2 units Eggs
  • 2 cups Milk
  • ¼ cup Butter, Melted
  • ½ cup Sugar
  • 1 teaspoon Ground Cinnamon
  • ½ teaspoon Ground Nutmeg
  • 1 teaspoon Vanilla

Apple Cinnamon Topping

  • 2 cups Diced Granny Smith Apples
  • 1 tablespoon Coconut Oil
  • 2 tablespoons Brown Sugar
  • 1 teaspoon Cinnamon
  • a pinch Salt

Instructions

  1. Preheat the oven to 350°F.
  2. Prepare stale bread by cutting it into cubes and letting it sit out overnight or baking it for 15 minutes at 300°F.
  3. Grease a 1 1/2 quart casserole dish with coconut oil.
  4. In a skillet, heat coconut oil and sauté the diced apples with brown sugar, cinnamon, and salt for 5-7 minutes until tender.
  5. In a bowl, combine eggs, milk, melted butter, sugar, cinnamon, nutmeg, and vanilla, then pour over the bread cubes and let sit for 5 minutes.
  6. Transfer the mixture to the greased pan and bake uncovered for 50-55 minutes until puffed and browned.
  7. Serve warm with caramel sauce or whipped cream if desired.
