Ingredients

The pudding

  • 5-6 cups stale French bread cubes
  • 3 cups apples, peeled and chopped
  • 4 whole eggs
  • 3 yolks egg yolks
  • cups milk
  • cups heavy cream
  • ¾ cup brown sugar
  • ¼ cup sugar
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 2 teaspoons pumpkin or apple pie seasoning
  • 1 tablespoon butter, chopped

The syrup

  • 1 recipe Buttermilk Syrup

Instructions

  1. Preheat the oven to 350°F and grease a 9x13 inch baking dish.
  2. Cube the stale French bread into 1-inch cubes and let them dry out for a few hours or bake them for 10-15 minutes.
  3. Peel and chop the apples into small pieces.
  4. In a large bowl, toss the bread cubes and chopped apples together, then transfer them to the greased baking dish.
  5. In the same bowl, whisk together the eggs, egg yolks, milk, heavy cream, brown sugar, sugar, salt, vanilla extract, almond extract, and pumpkin or apple pie seasoning.
  6. Pour the egg mixture over the bread and apples, ensuring all pieces are soaked.
  7. Let the mixture stand for at least 15 minutes or refrigerate overnight.
  8. Dot the mixture with chopped butter and bake for 40-50 minutes until the center is set and apples are tender.
  9. Allow to cool for 5 minutes before cutting into pieces and serving with warm Buttermilk Syrup.
