Ingredients

  • 1 cup old fashioned rolled oats
  • ¼ cup soy protein powder
  • 2 Tbsp cornstarch
  • ½ tsp cinnamon
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • cup almond butter
  • ¼ cup milk of choice
  • 3 Tbsp maple syrup
  • 1 tsp vanilla extract
  • ¼ cup toffee bits
  • cup chocolate chips

Instructions

  1. Preheat the oven to 350°F and prepare a cookie sheet with parchment paper.
  2. In a large bowl, mix the oats, protein powder, cornstarch, cinnamon, baking powder, baking soda, and salt.
  3. Add the almond butter, milk, maple syrup, and vanilla extract to the dry ingredients and mix until combined.
  4. Gently fold in the toffee bits and chocolate chips.
  5. Scoop out 2 tablespoons of dough, roll into a ball, and place on the cookie sheet, spacing them 2 inches apart.
  6. Flatten the dough balls slightly with a fork.
  7. Bake for about 6 minutes until the tops are springy and edges darken slightly.
  8. Allow the cookies to cool on the tray for a few minutes before transferring to a wire rack to cool completely.
