Instructions
- Preheat the oven to 350°F and prepare a cookie sheet with parchment paper.
- In a large bowl, mix the oats, protein powder, cornstarch, cinnamon, baking powder, baking soda, and salt.
- Add the almond butter, milk, maple syrup, and vanilla extract to the dry ingredients and mix until combined.
- Gently fold in the toffee bits and chocolate chips.
- Scoop out 2 tablespoons of dough, roll into a ball, and place on the cookie sheet, spacing them 2 inches apart.
- Flatten the dough balls slightly with a fork.
- Bake for about 6 minutes until the tops are springy and edges darken slightly.
- Allow the cookies to cool on the tray for a few minutes before transferring to a wire rack to cool completely.
