Ingredients

Dry Ingredients

  • 1 cup old fashioned rolled oats
  • ¼ cup soy protein powder
  • 2 Tbsp cornstarch
  • ½ tsp cinnamon
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt

Wet Ingredients

  • cup almond butter
  • ¼ cup milk of choice
  • 3 Tbsp maple syrup
  • 1 tsp vanilla extract

Add-ins

  • ¼ cup toffee bits
  • cup chocolate chips

Instructions

  1. Preheat the oven to 350°F and line a cookie sheet with parchment paper.
  2. In a large bowl, whisk together the dry ingredients.
  3. Add the wet ingredients to the dry ingredients and mix until combined.
  4. Fold in the toffee bits and chocolate chips.
  5. Scoop 2 tablespoons of dough and roll into a ball, placing them on the cookie sheet.
  6. Press the dough balls down slightly with a fork.
  7. Bake for about 6 minutes until the cookies are slightly springy and the edges darken.
  8. Let the cookies cool on the tray for a few minutes before transferring them to a wire rack.
