Instructions
- Prepare the buffalo chicken by mixing buffalo sauce, Greek yogurt, and honey until combined.
- Fold the shredded chicken into the buffalo sauce mixture until well coated.
- Add minced celery and onion to the chicken mixture and combine.
- Lay out the tortillas and evenly distribute matchstick carrots on each.
- Top the carrots with romaine lettuce and quartered cherry tomatoes.
- Add buffalo chicken mixture on top, followed by blue cheese crumbles.
- Wrap each tortilla tightly by folding in the sides and rolling it up.
- Serve immediately or wrap in plastic wrap and refrigerate for later.
