Ingredients

The buffalo chicken

  • 1 to 1.5 lbs. cooked shredded chicken breast
  • cup Franks buffalo sauce
  • cup full-fat Greek yogurt
  • 1 tablespoon honey

The wrap ingredients

  • 8 large flour tortillas
  • 3 stalks celery, minced
  • ½ red onion minced
  • 2 cups matchstick carrots
  • 2 cups romaine lettuce
  • 2 cups cherry tomatoes, quartered
  • 1 cup blue cheese crumbles

Instructions

  1. Prepare the buffalo chicken by mixing buffalo sauce, Greek yogurt, and honey until combined.
  2. Fold the shredded chicken into the buffalo sauce mixture until well coated.
  3. Add minced celery and onion to the chicken mixture and combine.
  4. Lay out the tortillas and evenly distribute matchstick carrots on each.
  5. Top the carrots with romaine lettuce and quartered cherry tomatoes.
  6. Add buffalo chicken mixture on top, followed by blue cheese crumbles.
  7. Wrap each tortilla tightly by folding in the sides and rolling it up.
  8. Serve immediately or wrap in plastic wrap and refrigerate for later.
