Ingredients

The scallops

  • lbs scallops
  • 1 pinch cayenne pepper
  • salt to taste
  • ground black pepper to taste

The bacon

  • 4 slices bacon

The garnish

  • ½ tablespoon chopped parsley
  • lime wedges

Instructions

  1. 1. Remove the ligaments from the scallops and rinse them, then pat dry.
  2. 2. Season the scallops with salt, black pepper, and cayenne pepper.
  3. 3. Heat a skillet over medium heat and cook the bacon until crispy, then remove it but keep the fat in the pan.
  4. 4. Sear the scallops in the skillet for about 1 minute on each side until golden brown.
  5. 5. Add the bacon back to the skillet, squeeze fresh lemon juice over the scallops, and top with parsley.
  6. 6. Serve immediately.
