Ingredients

The scallops

  • 2 pounds large sea scallops
  • 1 pound thin-cut bacon strips, sliced in half
  • to taste salt
  • to taste freshly ground black pepper
  • olive oil

The herb-butter sauce

  • cup butter
  • 1 small shallot, minced
  • 3 cloves garlic, minced
  • 1 cup chopped parsley
  • 1 teaspoon dried oregano
  • 1 pinch salt

Instructions

  1. Preheat the oven to 425°F and line a baking sheet with parchment paper.
  2. Pat the scallops dry and wrap each with a half strip of bacon, securing with a toothpick.
  3. Place the wrapped scallops on the baking sheet, drizzle with olive oil, and season with salt and pepper.
  4. Bake for 12 to 14 minutes until the scallops are cooked through.
  5. While baking, melt butter in a saucepan over medium-low heat, then add minced shallot and garlic, cooking until fragrant.
  6. Remove from heat and stir in parsley, oregano, and salt.
  7. Serve the scallops warm, drizzled with the herb-butter sauce.
