Apple Cinnamon Cookies

Ingredients

  • 2 large apples, peeled, cored and cut into eighths
  • 2 cups blanched, slivered almonds
  • 2 teaspoons coconut oil, melted
  • 2 teaspoons vanilla extract
  • 1 tablespoon cinnamon
  • 1 cup finely shredded unsweetened coconut
  • a pinch Kosher salt
  • 3 large eggs, lightly beaten

Instructions

  1. Preheat the oven to 350°F.
  2. Grate the apples using a shredder disc on a food processor.
  3. Measure out 2 cups of shredded apples and set aside.
  4. Replace the shredding disc with the regular chopping blade and pulse the almonds, cinnamon, coconut oil, and vanilla until coarsely ground.
  5. Combine the apples, almonds, shredded coconut, and salt in a large bowl and stir to combine.
  6. Add the eggs and mix everything evenly.
  7. Use a disher to scoop out the dough and place each dollop on a parchment lined cookie sheet.
  8. Flatten the dough with your hands.
  9. Bake in the oven for about 25-30 minutes, rotating halfway through, until the cookies start turning brown around the edges.
  10. Cool the cookies on a rack for about 20 minutes before serving.
