Apple Cinnamon Cookies

Instructions
- Preheat the oven to 350°F.
- Grate the apples using a shredder disc on a food processor.
- Measure out 2 cups of shredded apples and set aside.
- Replace the shredding disc with the regular chopping blade and pulse the almonds, cinnamon, coconut oil, and vanilla until coarsely ground.
- Combine the apples, almonds, shredded coconut, and salt in a large bowl and stir to combine.
- Add the eggs and mix everything evenly.
- Use a disher to scoop out the dough and place each dollop on a parchment lined cookie sheet.
- Flatten the dough with your hands.
- Bake in the oven for about 25-30 minutes, rotating halfway through, until the cookies start turning brown around the edges.
- Cool the cookies on a rack for about 20 minutes before serving.
