Instructions
- 1. Preheat the oven to 350°F and line baking sheets with parchment paper.
- 2. In a large mixing bowl, whisk the egg.
- 3. Add the almond butter, coconut sugar, cinnamon, baking soda, and vanilla to the bowl and mix until a batter forms.
- 4. Stir in the chopped dried apples.
- 5. Scoop golfball-sized dollops of the batter onto the lined baking sheets.
- 6. Bake for about 10-12 minutes or until the edges start to brown.
- 7. Let the cookies cool on the pan for at least 5 minutes before transferring them to a cooling rack.
- 8. Store in an airtight container at room temperature for up to a week.
