Ingredients

  • 1 cup almond butter
  • ½ cup coconut sugar
  • 2 tsp cinnamon
  • ½ tsp baking soda
  • ½ tsp vanilla
  • 1 large egg
  • ½ cup dried apples, chopped

Instructions

  1. 1. Preheat the oven to 350°F and line baking sheets with parchment paper.
  2. 2. In a large mixing bowl, whisk the egg.
  3. 3. Add the almond butter, coconut sugar, cinnamon, baking soda, and vanilla to the bowl and mix until a batter forms.
  4. 4. Stir in the chopped dried apples.
  5. 5. Scoop golfball-sized dollops of the batter onto the lined baking sheets.
  6. 6. Bake for about 10-12 minutes or until the edges start to brown.
  7. 7. Let the cookies cool on the pan for at least 5 minutes before transferring them to a cooling rack.
  8. 8. Store in an airtight container at room temperature for up to a week.
