Healthy Cheese and Spinach Calzones

Instructions
- Preheat the oven to 500°F.
- In a non-stick skillet, cook the onion, salt, and pepper over medium heat until translucent.
- Lower the heat, add the spinach, and stir until wilted, about 1 minute. Turn off the heat and set aside.
- In a mixing bowl, combine the cottage cheese, tofu, mozzarella, egg, and nutmeg, mixing until well combined.
- Remove excess liquid from the spinach and fold it into the cheese mixture. Set aside.
- Divide the dough into 2 equal pieces and roll or stretch each into a 6-8 inch disc, using cornmeal for rolling if desired.
- Place half of the spinach mixture in the center of each disc and flatten slightly.
- Fold the dough over to form a half moon and press lightly to seal.
- Fold the edges to ensure the filling is sealed in.
- Transfer to a pizza pan or cookie sheet and bake for 15-20 minutes until golden brown.
