Healthy Cheese and Spinach Calzones

Ingredients

Dough

  • ¼ recipe whole wheat pizza dough

Spinach mixture

  • 325 g spinach, chopped
  • 1 small onion, diced
  • ¼ tsp salt
  • ¼ tsp pepper
  • to taste freshly grated nutmeg
  • 100 g extra firm tofu, grated
  • 100 g low fat mozzarella, grated
  • 1 cup cottage cheese
  • 1 large egg

Instructions

  1. Preheat the oven to 500°F.
  2. In a non-stick skillet, cook the onion, salt, and pepper over medium heat until translucent.
  3. Lower the heat, add the spinach, and stir until wilted, about 1 minute. Turn off the heat and set aside.
  4. In a mixing bowl, combine the cottage cheese, tofu, mozzarella, egg, and nutmeg, mixing until well combined.
  5. Remove excess liquid from the spinach and fold it into the cheese mixture. Set aside.
  6. Divide the dough into 2 equal pieces and roll or stretch each into a 6-8 inch disc, using cornmeal for rolling if desired.
  7. Place half of the spinach mixture in the center of each disc and flatten slightly.
  8. Fold the dough over to form a half moon and press lightly to seal.
  9. Fold the edges to ensure the filling is sealed in.
  10. Transfer to a pizza pan or cookie sheet and bake for 15-20 minutes until golden brown.
