Ingredients

Dough

  • 1 tsp active dry yeast
  • 2 ¼ cups all purpose flour
  • 1 tsp salt
  • 1 tbsp olive oil
  • ½ cup lukewarm water
  • 6 tbsp lukewarm water

Filling

  • ½ cup spicy Greek feta dip
  • cup crumbled feta cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup cooked, shredded chicken
  • ½ tbsp olive oil
  • ½ tbsp dried oregano
  • to taste salt and pepper
  • ½ small red onion, sliced thin
  • ½ cup red pepper, diced
  • 4 cups fresh spinach, wilted

Instructions

  1. In a mixing bowl, combine lukewarm water and yeast, allowing it to dissolve.
  2. Add flour, salt, and olive oil to the yeast mixture and mix until a sticky dough forms.
  3. Knead the dough on a floured surface until smooth, then divide into two balls and refrigerate for 2 hours.
  4. Prepare a baking sheet with parchment paper and flour, then let the dough rise until doubled in size.
  5. Mix shredded chicken with olive oil, oregano, salt, and pepper, and wilt the spinach.
  6. Preheat the oven to 450°F and roll out the dough into circles.
  7. Layer the filling on one half of each dough circle, leaving a border.
  8. Fold the dough over the filling, crimp the edges, and cut slits on top.
  9. Brush the calzones with olive oil and bake until golden brown, about 15-20 minutes.
  10. Let cool for 5 minutes before serving.
