Ingredients

The dough

  • 1 pound fresh pizza dough
  • 1 tablespoon olive oil
  • All-purpose flour for dusting the counter

The filling

  • ½ yellow onion diced
  • 2 cloves garlic minced
  • 2 cups chopped kale
  • 1 cup mushrooms
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ¼ cup Parmesan cheese
  • ¼ teaspoon dried basil
  • Pinch crushed red pepper flakes
  • to taste salt
  • to taste black pepper

For serving

  • Easy Marinara Sauce

Instructions

  1. Preheat the oven to 400°F and ensure the pizza dough is at room temperature.
  2. In a skillet, heat olive oil over medium heat, add onion and cook until translucent, then stir in garlic and cook for 1 minute.
  3. Add kale and mushrooms to the skillet, cover, and cook until tender, then remove from heat.
  4. In a bowl, combine ricotta, mozzarella, and Parmesan cheeses, then stir in the kale and mushroom mixture along with dried basil, crushed red pepper, salt, and pepper.
  5. Divide the dough into 4 portions, roll each into a circle, brush edges with water, and place filling on one half of the circle.
  6. Fold the dough over the filling, pinch edges, pierce the top with a fork, and transfer to a baking sheet.
  7. Brush each calzone with olive oil and bake for 18-20 minutes until golden brown, then let cool for 5 minutes before serving.
