Instructions
- Preheat the oven to 400°F and ensure the pizza dough is at room temperature.
- In a skillet, heat olive oil over medium heat, add onion and cook until translucent, then stir in garlic and cook for 1 minute.
- Add kale and mushrooms to the skillet, cover, and cook until tender, then remove from heat.
- In a bowl, combine ricotta, mozzarella, and Parmesan cheeses, then stir in the kale and mushroom mixture along with dried basil, crushed red pepper, salt, and pepper.
- Divide the dough into 4 portions, roll each into a circle, brush edges with water, and place filling on one half of the circle.
- Fold the dough over the filling, pinch edges, pierce the top with a fork, and transfer to a baking sheet.
- Brush each calzone with olive oil and bake for 18-20 minutes until golden brown, then let cool for 5 minutes before serving.
