Buffalo Chicken Calzone

Ingredients

The dough

  • 1 lb Fresh Pizza Dough
  • 1 Large Organic Egg
  • 3 tbsp Water
  • cup Pastry Flour
  • 1 tsp Cornmeal Medium Grind

The filling

  • 2 Boneless Chicken Breasts
  • 1 cup Creme Fraiche
  • 1 cup Shredded White Cheddar
  • ½ cup Grated Parmesan Cheese
  • 8 oz Fresh Mozzarella
  • ½ cup Buffalo Sauce
  • 1 tsp Artisanal Seasoning
  • 1 tsp Crushed Red Pepper
  • 1 tbsp Minced Garlic
  • 1 tsp Black Pepper
  • 1 tsp Paprika
  • 1 tsp Garlic Powder

For serving

  • to taste Ranch Dressing or Blue Cheese Dressing

Instructions

  1. Spread pastry flour over the counter and shape the dough into a circle.
  2. Butterfly cut the chicken breasts and season with paprika, black pepper, and garlic powder. Cook in a pan for 4 minutes on each side.
  3. Cut the cooked chicken into cubes and mix with parmesan, creme fraiche, cheddar, garlic, red pepper flakes, artisanal seasoning, black pepper, and buffalo sauce.
  4. Place the chicken mixture on one half of the dough and add slices of fresh mozzarella on top.
  5. Fold the other half of the dough over the filling and seal the edges.
  6. Mix the egg and water, then brush over the top of the calzone, cutting small holes for steam.
  7. Sprinkle cornmeal on a baking pan and place the calzone on it.
  8. Preheat the oven to 425°F and bake the calzone for 18 minutes.
  9. Remove from the oven and serve with ranch or blue cheese dressing.
