Instructions
- Spread pastry flour over the counter and shape the dough into a circle.
- Butterfly cut the chicken breasts and season with paprika, black pepper, and garlic powder. Cook in a pan for 4 minutes on each side.
- Cut the cooked chicken into cubes and mix with parmesan, creme fraiche, cheddar, garlic, red pepper flakes, artisanal seasoning, black pepper, and buffalo sauce.
- Place the chicken mixture on one half of the dough and add slices of fresh mozzarella on top.
- Fold the other half of the dough over the filling and seal the edges.
- Mix the egg and water, then brush over the top of the calzone, cutting small holes for steam.
- Sprinkle cornmeal on a baking pan and place the calzone on it.
- Preheat the oven to 425°F and bake the calzone for 18 minutes.
- Remove from the oven and serve with ranch or blue cheese dressing.
