Ingredients

Calzone Filling

  • 1 cup fresh ricotta
  • 4 ounces fresh mozzarella, grated
  • 2 ounces Parmesan, grated
  • 3 tablespoons chopped basil
  • 1 teaspoon Italian seasoning
  • to taste salt and pepper
  • 1 ball pizza dough
  • as needed cup all-purpose flour

Toppings

  • ⅔-1 cup pizza sauce
  • 1 cup cooked chicken
  • 1 cup sliced mushrooms
  • ½-1 cup sliced green bell pepper
  • 1 cup Parmesan
  • 1 egg beaten

Instructions

  1. Preheat the oven to 425°F and line a baking sheet with foil.
  2. In a bowl, mix ricotta, mozzarella, Parmesan, basil, and Italian seasoning; season with salt and pepper.
  3. On a floured surface, divide the pizza dough into 4-6 equal parts.
  4. Roll each part into an 8-inch circle, about ¼ inch thick.
  5. Place the cheese mixture on one half of the dough, add pizza sauce and other toppings, leaving a ½-inch border.
  6. Fold the dough over and pinch to seal the edges; make a slit in the top if desired.
  7. Brush the edges with beaten egg and sprinkle with Parmesan.
  8. Bake for 18-20 minutes until golden brown and cooked through.
