Ingredients

The dough

  • 2 cups warm water
  • 3 tsp active dry yeast
  • 1 tbsp honey
  • cup olive oil
  • 6 cups white whole wheat flour
  • tsp salt

The filling

  • ½ cup pizza sauce
  • 8 ounces mushrooms, sautéed
  • 1 cup grated mozzarella
  • 1 cup ricotta

Instructions

  1. Mix warm water, yeast, and honey; let sit for 5 minutes before adding oil.
  2. In a stand mixer, combine flour and salt, then add the yeast mixture.
  3. Use a dough hook to mix until a ball forms; adjust with flour or water as needed.
  4. Divide the dough into 4 large or 8 smaller balls and let rise for 20-30 minutes.
  5. Preheat oven to 425°F and grease cookie sheets.
  6. Roll out each dough piece into a circle ⅛ inch thick and add sauce, mushrooms, and cheese.
  7. Fold the dough in half, pinch the edges, and pierce with a fork.
  8. Bake for 15-20 minutes until browned; let cool slightly before serving.
