Whole Wheat Calzones

The filling

Instructions
- Mix warm water, yeast, and honey; let sit for 5 minutes before adding oil.
- In a stand mixer, combine flour and salt, then add the yeast mixture.
- Use a dough hook to mix until a ball forms; adjust with flour or water as needed.
- Divide the dough into 4 large or 8 smaller balls and let rise for 20-30 minutes.
- Preheat oven to 425°F and grease cookie sheets.
- Roll out each dough piece into a circle ⅛ inch thick and add sauce, mushrooms, and cheese.
- Fold the dough in half, pinch the edges, and pierce with a fork.
- Bake for 15-20 minutes until browned; let cool slightly before serving.
