Szechuan Noodles

Ingredients

The sauce

  • ¼ cup coconut aminos
  • 2 tbsp rice vinegar
  • 2 tsp sesame seeds
  • 1 tsp red curry paste
  • ½ tsp red pepper flakes

The rest

  • 2 tbsp sesame oil
  • 1 red onion, thinly sliced
  • 4 cloves garlic, minced
  • 1 lb ground beef
  • Sea salt and pepper
  • 4 baby bok choy, quartered lengthwise
  • 4 green onions, sliced into 1 inch pieces
  • 2-3 zucchini, spiralized into thick noodles

Instructions

  1. Whisk the sauce ingredients in a small bowl or jar and set aside.
  2. Heat sesame oil in a large skillet over medium heat.
  3. Add the sliced onion and cook until it starts to soften.
  4. Stir in the minced garlic and cook until fragrant.
  5. Add the ground beef, breaking it up and cooking until browned.
  6. While the beef is cooking, prep the bok choy and zucchini.
  7. Once the beef is browned, add the sauce, green onions, bok choy, and zucchini to the pan.
  8. Stir to coat everything in sauce and cook until the noodles and bok choy begin to soften.
  9. Remove from heat and serve, topping with extra green onion, sesame seeds, and red pepper flakes as desired.
