zucchini, spiralized into thick noodles
Instructions
- Whisk the sauce ingredients in a small bowl or jar and set aside.
- Heat sesame oil in a large skillet over medium heat.
- Add the sliced onion and cook until it starts to soften.
- Stir in the minced garlic and cook until fragrant.
- Add the ground beef, breaking it up and cooking until browned.
- While the beef is cooking, prep the bok choy and zucchini.
- Once the beef is browned, add the sauce, green onions, bok choy, and zucchini to the pan.
- Stir to coat everything in sauce and cook until the noodles and bok choy begin to soften.
- Remove from heat and serve, topping with extra green onion, sesame seeds, and red pepper flakes as desired.
