Raw Berry and Chocolate Torte

Ingredients

Base

  • 175 g raw walnuts
  • 1 none zest of 1 lemon
  • ½ cup dried berries
  • 60 ml melted extra virgin coconut oil
  • 1 teaspoon stevia powder

Filling

  • 155 g raw, unsalted cashews
  • 40 g raw cacao powder
  • 115 g cacao butter, grated and melted
  • 2 tablespoons rice malt syrup
  • 2 tablespoons additive-free coconut milk
  • 1 none juice of 1 lemon
  • 2 cups mixed berries
  • extra none berries for decorating (optional)

Instructions

  1. Soak the cashews in water for 2 hours and then drain.
  2. Blend the walnuts in a food processor until finely chopped, then mix with lemon zest.
  3. Blend the coconut oil and dried berries, then combine with the walnut mixture.
  4. Press the mixture into a springform cake tin and chill in the freezer for 30 minutes.
  5. Blend all filling ingredients in the food processor until smooth.
  6. Remove the base from the freezer and spread the filling over it.
  7. Chill in the fridge for 2 hours or in the freezer for 1 hour until set.
  8. Decorate with extra berries before serving.
