Ingredients

Taco Filling

  • 1 Tbsp olive oil
  • 2 cloves garlic, minced
  • 1 lb 93% lean ground turkey
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 Tbsp chili powder
  • 1 1/2 tsp ground cumin
  • 1/8 tsp cayenne pepper (optional)
  • 1/2 cup low-sodium chicken broth
  • 1/2 cup tomato sauce

Bowls

  • 2 (12 oz) bags riced cauliflower, cooked
  • 1 cup frozen corn, cooked
  • 3/4 cup shredded Mexican blend cheese
  • 1 cup pico de gallo
  • 1 whole avocado, sliced
  • to taste fresh cilantro
  • to taste lime slices

Instructions

  1. Heat olive oil in a skillet over medium-high heat.
  2. Add garlic and sauté for 10 seconds, then add turkey and season with salt and pepper.
  3. Cook the turkey for 5-6 minutes, breaking it up occasionally until cooked through.
  4. Add chili powder, cumin, and cayenne pepper; cook for 20 seconds.
  5. Pour in chicken broth and tomato sauce, bring to a simmer, then reduce heat and let simmer for 3-5 minutes.
  6. Assemble bowls by dividing cauliflower rice among them, topping with turkey mixture, corn, cheese, avocado, pico de gallo, cilantro, and serve with lime.
