Ingredients

  • 2 cups unsweetened shredded coconut
  • 4 cups water
  • 1 teaspoon vanilla extract
  • 6 drops stevia

Instructions

  1. Soak the shredded coconut in water for 1-2 hours without discarding the water.
  2. In a Vitamix, combine the soaked coconut with water, vanilla extract, and stevia.
  3. Process the mixture on high speed for 60 seconds.
  4. Strain the liquid through a nut milk bag and discard the solids.
  5. Serve the coconut milk.
