Homemade Coconut Milk

Instructions
- Soak the shredded coconut in water for 1-2 hours without discarding the soaking water.
- In a Vitamix, combine the soaked coconut and water along with vanilla extract and stevia.
- Process the mixture on high speed for 60 seconds.
- Strain the liquid through a nut milk bag, discarding the solids.
- Serve the coconut milk.
